WIAW #67: Long Time No See {What I Ate Wednesday}

Has it really been over a month since my last true What I Ate Wednesday? Honestly, I have a hard time remembering to take photos of everything I eat. I don’t know how food bloggers do it. But, since it’s been a while, I figured now was as good a time as any to join the party (thanks Jenn for hosting.)


Breakfast

 

overnight oats

7:45 am — An almost empty jar of almond butter = overnight oats. I made it with 1/3 cup of almond milk, 1/3 cup oats, 1/3 cup Greek yogurt, a touch of salt, ground flax seed, and honey. Soaked overnight with some added banana in the morning. It’s not quite as good as hot oats, but still delicious and fast.

Lunch

1:00 pm — The sun started to try peeking out around lunch. Just in time for my walk with little man. Since Koji is still on his antibiotics for kennel cough, he can’t go to daycare and I’ve been on puppy duty every day at lunch. I am so lucky and thankful that I work less than a 10-minute drive from my house. Going home everyday can be a pain, but his little face makes it easier. We’ve been loving our lunchtime walks lately. The weather is finally cooperating.

Since I make this trip everyday over my lunch break, I often eat lunch at my desk while working. Not ideal, I know. But you gotta do what you gotta do. Definitely looking forward to warmer temps when I can go outside and eat when I’m free from puppy duty. I was craving a sandwich when I was making lunch the night before. Simple turkey and cheese with mustard on whole grain bread. Plus some baby carrots on the side. Not pretty, but delicious.

 

Workout

 

After work, I took Koji to a local park on a whim. I’ve been feeling bad about not giving him an opportunity to really run. We don’t have a yard and the only options we have is a dog park downtown (which is a pain and time consuming to get to) and some local parks. The problem with the local parks is that a lot of them are only designated off leash during certain hours of the day – most of them from dawn until 9am only. Not ideal. Plus, pretty much all of them are closed this month to let the grass grow. I had passed this park (Roger’s Park for those who are local) a million times and decided to take him on a whim. Well, I’m glad I did. There were about 15 other dogs there all having a grand time. Koji had a blast. Doing that again for sure.

After I got home, I headed out for a run. I was planning on doing an easy 4 miles, but between my body feeling good and the 60 degree temperatures, I decided to push it. I did a 25 minute tempo run (1 mile warm-up, 2.5 miles at half marathon pace, 1 mile cool down) for a total of 4.5 miles. It was awesome! I finished up the workout with some hip PT moves. Before my run I had an un-pictured coconut rolled date.

Dinner

 

shrimp and white beans

Any recipe that involves shrimp is a winning recipe in my eyes. Dinner was another goodie from the Runner’s World Cookbook: Shrimp and White Beans. I served it over some plain brown rice. This recipe was seriously so simple and came together in about 15 minutes flat. Bernie even approved, highly. Oh Runner’s World, I love you!
