WIAW #63: Mondays {What I Ate Wednesday}

If you haven’t read yesterday’s post about my 1-year reflections on my Rhabdo incident, I encourage you to do so. There’s some interesting things going on in the comments section. Join in.

Now, onto What I Ate Wednesday. Today’s meals are from Monday. Oh Mondays, how you always seem to sneak up on us.


Breakfast

One of the good things about Monday is the plethora of fresh food in my fridge from the weekend’s shopping trip. Finally, some fresh fruit! In my yogurt bowl was plain 2% Greek yogurt, honey, pineapple, strawberries, and vanilla granola. Plus lots of coffee — it was Monday morning after all.

Mid-Morning Snack

My hunger started again around 11:00, so I grabbed a Kind Bar from my drawer. I liked this one, but I definitely like the fruit and nut flavors a lot more.

Lunch

After a Koji visit, I headed back to the office to eat my lunch. Salad with baby greens, chick peas, chopped cucumber, baby tomatoes, shredded carrots, warm sweet potato and balsamic dressing. Plus an un-pictured apple.

Dinner

After a gym session (4 mile run + 15 minutes of abs and hip PT work) I was STARVING! Dinner was a super easy favorite in our house. Whole wheat spaghetti with meat sauce. I made the meat sauce by sauteing some diced mushrooms in olive oil, then added 1/2 lb. of ground turkey and cooked until brown. I like adding mushrooms to the meat sauce because it adds a meatier flavor to the turkey and sneaks in more veggies. Then added it to warmed jarred sauce, threw in some fresh basil and pepper and cooked for 10-15 minutes. On the side were roasted broccoli. Delicious.

Dessert

I made a batch of peanut butter energy bites last week and had a couple after dinner. I forgot how good these are! I already made a new batch last night with almond butter.

Do you grocery shop on the weekends or do you shop throughout the week?

I used to shop a couple times a week, getting things as I needed them. Now that I cook for Bernie and myself, I make a grocery list and shop once a week.
